Potatoes in Suffle
Serves 6
Ingredients
10 potatoes (Desirees)
100 grams butter
6 slices bread without crusts soaked in milk,
1 dl milk
4 egg yolks
salt, pepper and nutmeg
5 egg whites, beaten till stiff
50 grams parmesan, grated
extra melted butter
Method
Peel potatoes
Boil in salted water till cooked
Drain well and put through sieve
Put back in pan with butter, bread which has been soaked and then squeezed dry, milk, egg yolks, seasoning
Mix well and then fold through the beaten egg whites
Pile high in a well greased baking dish or into 6 individual dishes (if serving as a first course or luncheon dish). Sprinkle with extra melted butter and grated Parmesan
Bake till golden for 15-20 minutes
Makes a delicious accompaniment to many dishes or could be served as individual first courses, possibly with finely sliced ham or salmon.
