Mushrooms with Potato ( Mario's Recipe)
Serves 6-8 (depending on accompanying dishes)
Ingredients
2 kilo of large mushrooms
6 potatoes
300 grams of double cream
1 bunch of basil
200 grams parmesan, grated
100 grams of butter
salt and pepper
Method
Clean the mushrooms, wash and dry very well on a cloth. Allow a few hours to give them a chance to dry properly. Then cut in half centimetre slices. Peel potatoes and slice very finely, like chips. Chop basil roughly, , not too fine.
Take a buttered oven dish, layer the potatoes first and then put on mushrooms, then salt and pepper, basil and cheese and cream. Then repeat with potatoes and mushrooms etc.
Bake in oven at 200o for 20 minutes. For the first 10 minutes cover the dish with foil then take off to allow the dish to get some colour.
