Mushrooms with Cream
This is a rich and elegant accompaniment to veal, chicken and poached eggs. With the eggs it is beautiful breakfast dish.
Serves 6
Ingredients
600 grams white button mushrooms
45 ml olive oil
50 grams butter
1 onion, sliced
salt and pepper
200 ml cream
Method
Wipe clean the mushrooms. If they are small, keep whole. Cut into halves or quarter, depending on your preference.
Put on heat a small sauscepan with a little oil and butter, add the sliced onion. Heat but do not fry and do not colour the onion
Add the sliced mushrooms, season with a little salt and pepper and gently cook on moderate heat
After a few minutes, add cream, mix well and leave till the cream is slowly absorbed. This will happen very slowly
