Crispy Potatoes for Big and Little Kids

Silvana's treat for children ‚ large and small. She explains that for this method of frying potatoes, they have to be cut in a special way. The potatoes need to be trimmed to a rectangular shape and then divided into many small slices each of 3 millimetre thickness. This is best done on a slicer rather than with a knife in the hand.

Serves 6

Ingredients

1 kilo good quality potatoes
1 litre vegetable oil for frying

Method

Peel , then slice the potatoes as per instructions above and then put in a cloth to absorb any humidity. Do not wash them, This is most important.

The potatoes are cooked twice.

The first cooking is done in the oil at a low temperature (around 150 degrees C) so the potatoes don't fry but just boil slowly and don't colour at all.

Take them out of the oil for several minutes and raise the temperature to 250 degrees C approx

When the oil is really hot, put the potatoes back and let them colour.

This form of cooking will make them very crisp

Drain on paper and serve
