Scaloppine with Lemon
Serves 6
Ingredients
675 grams veal
flour, salt and pepper
60 grams butter
1/2 dl olive oil
30-40 ml lemon juice
15 grams parsley, chopped
Method
Prepare veal as described
Brown in oil and butter, cook in several batches
Place veal on paper to drain
Add lemon juice to pan, scrape all sediment together, reduce
Toss parsley into pan at last minute. Pour juices over meat and serve
