Scaloppine of Veal Hunter Style - as done at Mario's

Serves 6

Ingredients

650 gram veal
200 grams mushrooms, sliced finely
1 onion, finely chopped
flour
60 grams butter
100 ml sweet sherry
10 grams parsley, chopped
50 grams tomato puree

Method

Prepare veal as described

Brown in oil or butter

Place veal on paper to drain Keep in warm place

Fry onions in butter till soft then add the mushrooms and quickly toss.

Add a glass of sweet sherry and continue to fry quickly until the juices have thickened. Add some tomato puree, chopped parsley and about a teaspoon of butter.

Put veal onto hot plates, pour over the sauce and sprinkle with chopped parsley
