Lamb Romana - Roman Style Lamb

This is very popular in Spring

Serves 6

Ingredients

1 kilo of lamb, cut from the leg into 2 1/2- cm cubes
400 grams bread crumbs
400 grams parsley, chopped
3 cloves garlic, crushed in the garlic press
salt
freshly ground pepper
55 ml oil

Method

Mix the bread crumbs, parsley, garlic, salt, and pepper together thoroughly.

Brush the lamb pieces with oil, roll them in bread crumb mixture, place them on a baking dish, sprinkle with oil, and bake in moderate (350 degree) oven for 30 minutes, or until they are golden
