Lamb of the farmer thanks to the addition of the fresh pecorino cheese

Serves 6

Ingredients

1 kilo of lamb thigh
25 ml of olive oil,
1 medium onion, finely sliced
1 large lemon
150 grams grated pecorino (fresh, not too hard)
1 small chilli
salt


Method

Wash, and dry well the lamb's thigh

Put into a large pan with the oil, onion and chilli.

Place into a hot oven and let the thigh cook, turning it often to bathe with the cooking juices.

when the meat is well cooked and brown, take out of oven and let it rest a moment

heat plates, slice serve the lamb with cooking juices a squeeze of the lemon and some grated pecorino.
