Red Mullet Stuffed

Serves 6

Ingredients

12 very fresh red mullet
100 grams breadcrumbs
2 cloves of garlic, chopped
1-2 rosemary stalks
15 grams parsley, chopped
15 ml olive oil
salt and pepper
1-2 Lemon

Method

scale and clean the mullets

Bone the fish, keeping on the head and tail. Do this by cutting from the underside of the fish and keep the skin intact

Mix together in a bowl the breadcrumbs, garlic, rosemary, half the parsley, oil, salt and pepper

Stuff the fish with this filling, close them and place in a greased baking pan in which they fit snugly

Cook in a hot oven for 15 minutes approx

Serve onto hot plates with lemon juice squeezed over and sprinkled with chopped parsley
