Vegetable Broth

A simple nutritious soup which is very good for children and convalescents.

Serves 6

Ingredients

9 medium size potatoes
3 onions
a small bunch of celery
2 medium carrots
4 tomatoes
3 onions
cloves
8 bowlfuls of water
salt
grated parmesan

Method

Peel potatoes and keep whole. Cut in pieces the onions, carrot, celery and tomatoes. Put the vegetables and a couple of cloves into a large pot with salted water, cover and let it boil gently for two hours.

Strain the broth and put aside the potatoes, that can be used for some other preparation.

You should obtain an aromatic broth which is rich in nutrition and not have spent much money. You can finish this broth for service with some spoons of grated parmesan and a knob of butter.
