Spatzle
Ingredients
250 grams plain flour
200 ml milk
2 eggs
Pinch nutmeg
White pepper
Salt
Melted butter
Chopped parsley
Method
Place dry ingredients in a bowl, form a well in the centre.
Add eggs and milk, mix by hand to a thin batter, mixing it until smooth.
Rest for 20 minutes
Pour the mix through the hole of a spatzle maker (or a colander with large holes) into plenty of boiling water to form dumplings.
Scoop out when dumplings rise to the top of the water.
Toss in melted butter and a handful of chopped parsley
