Fish Fumet
Ingredients
1 kg fish trimmings
1 large onion chopped
3 carrots roughly chopped
2 sticks celery chopped
water to cover
Method
Put the fish bones including the head, with celery, carrot and onion in plain water. You can also add some extra clams and mussels, prawn heads (cleaned) and pieces of squid. Do not over cook. 10-15 minutes is enough. If it overcooks, the flavour changes. After it starts to boil, skim and cook for 10 minutes, no more as the flavour should be quite light.
