Silvana's Chicken Broth

Serves 6-8

Ingredients

1 large chicken carcasse (from a size 15 chicken)
1 carrot, scrubbed
1 onion, peeled
2 stalks of celery
salt
nutmeg pieces (not grated because then the broth becomes speckled)

Method

Put all ingredients into a large pot, cover with cold water and bring to the boil

Boil gently for about one hour

Strain and skim

Bring back to the boil and reduce slightly

This makes a lovely, natural broth which should be quite clear. It is nice with a little star pasta boiled and then served simply with some grated parmesan which boosts the chicken flavour
