Chestnut Mousse
This mousse and the chestnut tortino are from Patrizia Simone of Simone's at Bright.
Serves 4
Ingredients
300 grams sugar
15 ml water
300 gram chestnuts, boiled and peeled
14 ml rum
300 grams cream, whipped
80 grams good quality chocolate, melted
Method
Boil the sugar with the water.
Puree the chestnuts and add the rum and whipped cream, the melted chocolate and then the sugar syrup.
Serve the mousse in a glass with a marron glacée on the side.
