Zuppa Pavese
Serves 6
Ingredients
12 slices of fried bread
12 eggs
grated parmesan
salt
chicken
or meat broth
Method
Fry the slices of bread in butter till golden and put two into each bowl
On the slices carefully break in the two eggs, season with parmesan and a pinch of salt
Pour over broiling broth, very slowly taking care that the eggs do not break. The heat of the broth cooks the eggs.
