Tomato Soup

This is a very easy soup to make. The whole preparation and cooking time is less than an hour. Serves 6

Ingredients

100 grams onion
70 grams butter
25 grams flour
6 large tomatoes
20 grams Italian parsley, chopped
salt and pepper
1.500 litres ofchicken or meat broth
100 ml cream
bread toasted with parmesan

Method

Slice the onion finely and let it cook gently in a little butter. Do not colour. Sprinkle the flour over the onion and let it bind together. Add the peeled tomatoes (seeded and cut in large pieces) and the chopped parsley. Season with salt and pepper and let the tomato cook on very low heat, stirring constantly.

Cover with broth and let it cook gently for 30 minutes or a little more if necessary.

Serve with the Parmesan toasted bread.
