Stracciatella (Chicken, Egg and Cheese Broth)

This lovely light soup also has many variations but the essential elements are very good chicken broth, cheese and eggs which are whisked through to create the straccie 'rags or threads' of egg which give the dish its name.

Serves 6

Ingredients

Three whole eggs
salt
60 grams fine semolina
60 grams parmesan, grated
6 bowlfulls of chicken stock

Method

Break the eggs into a bowl and add a little salt; three spoons of fine semolina and three spoons of grated cheese. Whsk together well with a little bit of cold broth

Heat the remainder of the broth and when it is boiling, very gradually add the preparation of eggs, cheese and semolina constantly beating and whisking the mixture.

Let it gently come to the boil for a few minutes whilst still beating and you will get a stracciatella with fine light strands of egg throughout.
