Spinach and Noodles in Beef Broth
Serves 6
Ingredients
300 grams of spinach, washed and dried
basic beef broth
6 eggs
125 grams of parmesan cheese, grated
1 large lemon, juiced
400 grams of tagliolini noodles
Method
Chop the spinach coarsely
Heat the beef broth and add the spinach
Let cook a few minutes
Combine eggs, parmesan cheese and lemon juice
Cook tagliolini noodles in salted water and then strain in a colander
Put noodles into heated soup bowls, put a mixture of cheese and egg on top then pour over the spinach beef broth
