Mussel Soup

This is as much as a stew as it is a soup and is a Lou Molina special 'instant meal'. Lou is a great cook, expert racing driver and lover of life. He never wastes time and is always able to get a meal together quickly and well.

Serves 6

Ingredients

2 kilo mussels
100 ml olive oil
garlic
spoon of tomato paste
chilli
6 slices of bread toasted with garlic

Method

Wash the mussels well.

Put the oil and a clove of garlic in a pan and when the garlic is just coloured- throw it out, add the tomato paste and some chopped chilli.

After 2-3 minutes, put the mussels into the pan and let then cook over fierce heat shaking the pan form time to time until they are open.

Toast bread with garlic, put out onto a bowl

Pour over the mussels and their juice
