Crema Di Funghi Coltivati (Cream of Cultivated Mushrooms)

Serves 8

Ingredients

100 grams ground rice
2 litres broth
400 grams white mushrooms
100 grams butter
juice of 1/2 lemon
3 egg yolks
a glass of cream
sippets (small cubes of bread fried in butter)

Method

Make a cream of rice with ground rice and a little of the cold broth

Heat the rest of the broth to boiling point and then very gradually add the rice mixture, stirrng all the time.

Lower the heat and continue cooking gently for 5 minutes

Slice raw mushrooms and then cook in butter with a little lemon juice

Mix with rice and cook for about 10 mins

Add egg yolks and a little cream

Heat but do not let boil again.

Garnish with sippets
