The Childrens Soup (Cream of Chicken and Rice)

Serves 4

Ingredients

80 gms plain white rice
one young chicken (not too big)
water and salt
40 ml cream
salt

Method

Wash the rice and put in a pot with the chicken, cover with water and bring to the boil Skim and add salt

When the chicken is cooked, strain the broth, keep the rice aside

Let the broth cool and take off the fat from the surface

Take the skin off the chicken whilst it is still warm

Take all the meat off the bones and put the chicken meat and the rice into mortar

Puree and keep aside in a small bowl

Combine the puree with the skimmed broth

Heat and check for seasoning

Just before serving add cream
