Frittata with Onions

Serves 4-6

120 grams large onions
salt and pepper
5 grams oregano, chopped
80 ml approx olive oil
6-7 eggs

Slice the onions and put on a plate, season with salt and pepper and sprinkle with oregano Cook over slow heat in the olive oil until the onions break up

Take off heat and cool

Beat the eggs in a bowl with salt, mix well into the onion mixture

Put sufficient oil into a large pan and heat. When hot tip the mixture in and let it cook on one side and then on the other.

This frittata is also good eaten cold. It can be done with different vegetables (e.g. - leeks, peppers, silverbeet). Asparagus and zucchini are good in frittata but are best combined with parmesan cheese for flavour.
