Frittata with Basil

Serves 4-6

Ingredients

100 grams pecorino, grated
2 handfuls of basil leaves, coarsley chopped
6 large eggs
salt and pepper
10 ml oil - approx - for frying*

Method

Break the eggs in a bowl and lightly whisk with salt and pepper

Add the grated pecorino and the chopped basil and mix well together

Put a large pan onto heat with the oil; when hot tip in the mixture.

Cook the frittata on one side before turning over to do the other

Like other frittata this tastes as good cold as hot

* a light olive oil is recommended - not extra virgin olive oil
