Come in a tee-shirt or come in diamonds. Sardinian-born Pietro Porcu doesn't mind and you will be treated equally. He wants people to be much more casual in their approach. The one thing everyone must do is accept what he is cooking that day: don't ask questions, just sit back and enjoy. Service is not a strong point here. Treat it like being in someone's home. Accept what you are offered and don't stand on ceremony. And don't come back expecting to find the same things you did last time. 'Every day is a new day . . . the food is honest and unpretentious.' You may never know what you have ordered until it arrives on the table. Trust Pietro and the gates of culinary Heaven (Sardinian of course) will be opened.
