Ingredients
4 peeled diced Potatoes Potato Potato
6 tablespoons Vegetable Oil Vegetable Oil Vegetable Oil
1 1/2 tablespoons Lemon Juice Lemongrass Lemongrass
1 teaspoon Ground Carraway Seeds Caraway Caraway
1 1/4 teaspoons Salt Salt Salt
6 tablespoons Cayenne Pepper Cayenne Pepper Cayenne Pepper
3 tablespoons Ground Cumin Cumin Seed Cumin Seed
1 1/2 teaspoons Salt Salt Salt
Last three ingredients mixed with 2 1/2 teaspoons Water and called Brisa Water Water

MethodBoil potatoes in salted water until tender but still intact.
Drain off water and let spuds dry out.
Warm oil in heavy frying pan over moderate heat.
Add lemon juice, Brisa, carraway and salt and stir until liquid has evaporated.
Take off heat.
Add potatoes and turn gently.
Taste for seasoning.
