Preamble See Hummus bi Tahina
Ingredients
185 g (6 oz) Cracked Wheat Cracked Wheat Cracked Wheat
3 tablespoons finely chopped Onion Spring Onion Spring Onion

1 1/4 cups finely chopped Parsley Parsley Parsley
2 tablespoons finely chopped fresh Mint Mint Mint

2 medium sized firm Tomatoes Tomato Tomato

MethodSoak the cracked wheat for half an hour. Drain and squeeze out all the water. Spread on a cloth to dry. Wash the mint and parsley and dry thoroughly before chopping.
Mix the cracked wheat with onion, salt and pepper, parsley and mint. Add oil, lemon juice, and chopped tomatoes. Toss lightly. Adjust seasonings, adding more oil or lemon juice as required. It should have a distinctly lemon flavour.
Spoon into a bowl lined with crisp lettuce leaves and garnish with tomato slices or wedges and sliced cucumber.
