Ingredients
300 gm butternut pumpkin
1 tbs mint cut into juliene strips
2 tsp sugar or to taste
1.5 tbs white wine vinegar or to taste
1 clove garlic finely chopped
2 tbs olive oil
salt
freshly ground black pepper
Method
Peel and slice the pumpkin. Prepare the mint juliene, chop the garlic, measure out the sugar and vinegar
Warm the oil in a suitable sized frying pan. Add the pumpkin and garlic, saute gently until the pumpkin is soft but not collapsing. Add the mint, sugar, vinegar, salt and pepper. Cook for another minute or two. Check the seasoning and serve.
Remarks
Ada Boni calls this Sicilian pumpkin. Others might think of it as pumpkin with mint sauce.
