Salade Nicoise
Preamble
The date used is an estimated date - the menu was a folder dated 1978/9 - and the menu itself is billed as an Autumn menu. "Salmon, anchovies, tomatoes, potatoes, French beans, hard-boiled eggs, and lettuce are the usual elements for this appertizing combination, and you may arrange the salad in any manner you wish. Serve as an horsd'oeuvre or as a main course summer salad."
Ingredients3/4 lb cold, blanched French Beans 3 or 4 quartered Tomatoes 1/2 pint Vinaigrette (Olive Oil And Red Wine Or/Balsamic Vinegar) 1 head of Lettuce separated 3/4 lb cold, French Potato Salad 8 oz tinned Salmon Chunks drained 3 oz stoned Black Olives preferably the dry Mediterranean type 2 or 3 hard-boiled Eggs cold, peeled and quartered 6 to 12 tinned Anchovy Fillets drained 2 to 3 tablespoons chopped, fresh Green Herbs |
MethodJust before serving, season the beans and tomatoes with several spoonfuls of vinaigrette. Toss the lettuce leaves in the salad bowl with 1/8 pint of vinaigrette, and place the leaves around the edge of the bowl. Arrange the potatoes in the bottom of the bowl. Decorate with the beans and tomatoes, interspersing them with a design of salmon chunks, olives, eggs and anchovies. Pour the remaining dressing over the salad, sprinkle with herbs and serve. |
