Barley And Mushroom Casserole
Ingredients
5 teaspoons Butter Butter Butter
2 chopped Onions Spring Onion Spring Onion
10 oz Mushrooms Mushroom Mushroom
7 oz Pearl Barley Barley Barley
3/4 teaspoon Salt And Pepper Salt and Pepper Salt and Pepper
1 1/4 cups Stock Stock Stock

MethodPreheat oven to 325 F.
Melt butter, add onions and cook till golden, add mushrooms - cook 3 mins. Transfer onions and mushrooms to a casserole.
Add barley, salt and pepper.
Pour in stock and stir.
Cover and cook 40 minutes till barley is tender and liquid is absorbed.

Remarks
Serve with lamb, beef or poultry.
Chopped parsley or thyme can be added.
