Carrot and corn

Ingredients
1 sweet corn cob
1 medium carrot cut into a corn kernal sized dice
2 tsp butter
salt
freshly ground black pepper

Method

Cut the kernals from the corn cob and dice the carrot

Melt the butter in a small saucepan. Add the carrot and cook over a low heat until it starts to soften. Add the corn and allow it to sweat in the butter for about five minutes.

Don't over-cook - the corn should still it's raw sweetness. Serve.
