Brussel Sprouts with Pancetta

Ingredients
300 gms Brussel Sprouts
50 gms pancetta cut into small strips
2 tsp olive oil
salt
freshly ground black pepper

Method

Clean up the brussel sprouts, cut in half (quarters if they are large). Bring a pot of water to the boil, salt. Add the sprouts and cook for about five minutes in fast boiling water until just cooked. Drain.

Heat a suitable sized frying pan add the oil. Toss in the pancetta pieces and fry for a few minutes until the start to crisp add the brussel sprouts. Cook for another minute or so tossing frequently. Add pepper and check for salt. Serve.
