Swiss Barley Soup
Ingredients
3 1/2 oz Pearl Barley Barley Barley
1 lb Smoked Ham Hocks Ham Ham
1 teaspoon Salt Salt Salt
Freshly ground Black Pepper Capsicum Capsicum
4 pints cold Water Water Water
3 1/2 oz finely chopped Leeks Leek Leek
2 1/4 oz finely chopped Celery Celery Celery
2 oz finely chopped Onion Spring Onion Spring Onion
1 peeled finely chopped Potato Potato Potato
3/8 pint Double Cream Cream Cream

MethodPut barley, hocks, salt, pepper and water into saucepan and bring to the boil.
Reduced heat, cover pan and simmer 45 minutes.
Add leeks, celery, onions and potato and continue to simmer till vegetables are tender.
Remove hocks.
Finish with cream and seasonings.
