Cold Cucumber Soup
Preamble Very refreshing in hot weather.
Ingredients
1/4 pint top Milk Milk Milk
1 carton Yoghurt Yoghurt Yoghurt
1 large Cucumber peeled and cut into small dice Dill Cucumbers Dill Cucumbers
1 clove Garlic finely chopped Garlic Garlic
1 teaspoon ground Coriander Coriander Coriander
1 rounded teaspoon dried or I dessertspoon fresh, chopped Mint Mint Mint
Salt And Pepper Salt and Pepper Salt and Pepper
Sprigs of fresh Mint Mint Mint

MethodBeat milk and yoghurt together in a bowl until creamy, add the cucumber, garlic, coriander, mint, salt and pepper. Chill in refrigerator until very cold. Serve in iced soup plates with a sprig of mint on each.
