Chilled Cucumber And Yoghurt Soup

Ingredients
6 small Cucumbers Dill Cucumbers Dill Cucumbers
Salt Salt Salt
3 cloves Garlic Garlic Garlic
1 litre Yoghurt (sheeps) Yoghurt Yoghurt
White Pepper Pepper Pepper
1 bunch Mint finely chopped Mint Mint

Methodpeel and dice the cucumbers and sprinkle with salt, leave for 1 hour in a colander to drain.
Crush the garlic with a little salt
Mix a few spoons of the yoghurt with the garlic, season
Combine with the well drained cucumber (for a smoother texture, cucumber can be blended first)
Add mint and chill well
Serve in chilled bowls with a fresh mint leaf garnish

Remarks
You can experiment with othe herbs in this soup. Mint is the most refreshing, dill is also good but stronger, so use less.
Appears on an undated lunch menu - prices for a main are not more than $5.90, soups are $1.80, coffee is 60 cents.
