Spinach Soup



Ingredients

8 1/2 lb Spinach

4 chopped Onions

Spring Onion Spring Onion

8 oz Butter

8 oz Flour

Cornflour Cornflour

10 pints Chicken Stock

Stock Stock

Salt

Salt Salt

Pepper

Pepper Pepper

Nutmeg

Nutmeg Nutmeg

4 pints Milk

Milk Milk

Method

Wash spinach, drop into boiling water for 5 minutes.

Drain.

Cook onion in butter till soft and yellow.

Add flour.

Cook till blonde roux.

Add stock and spinach.

Season

Stir till boiling.

Simmer 20 minutes.

Add milk.

Garnish with lemon slices.
