Yue Tong Min (Fish Soup With Noodles)
Ingredients
1 tablespoon Peanut Oil Peanut Peanut
1 clove Garlic crushed Garlic Garlic
1 teaspoon finely chopped fresh Ginger Ginger Ginger
6 cups Fish Stock Stock Stock
500 grams Fillets Of White Fish Crayfish Crayfish
2-3 bundles Egg Noodles boiled Egg Noodle Egg Noodle
Few drops of Sesame Oil Sesame Sesame
2 tablespoons chopped fresh Coriander Leaves Coriander Coriander

MethodHeat oil in a saucepan and fry garlic and ginger over low heat for a few seconds. Add fish stock and bring slowly to the boil. Add fish cut into bite sized pieces, cook 5 minutes, then add noodles and return to the boil. Stir in sesame oil and garnish with coriander leaves. Serve at once.

To Finish:
Take very hot bowl - put in fish, crab, Chinese mushrooms, chilli, spring onion.
Pour over boiling stock.
Top with coriander.
