Ingredients

1 dozen red and green sweet Capsicums Capsicum Capsicum

MethodMince together red and green capsicums, onions, garlic, chillies, thyme, bay leaf and tomatoes. Flour and portioned chicken and seal in hot butter. Arrange in a baking dish. Add white wine and the minced veggies to the pan, salt and ground, black pepper. Boil and pour over the chicken. Bake in the oven for 20 minutes. To serve, cover with a fine julienne of capsicum and bake for 10 minutes.
