Roast Duck with Walnut Stuffing
Ingredients
1 oz Butter Butter Butter
1 medium Onion chopped Spring Onion Spring Onion
2 oz chopped Walnuts Walnut Walnut
4 oz fresh Breadcrumbs Bread Bread
1 teaspoon chopped Parsley Parsley Parsley
1 teaspoon Sage Sausage Sausage
1 teaspoon Thyme or Marjoram Thyme Thyme
1/2 teaspoon Cinnamon Cinnamon Cinnamon
Salt And Pepper Salt and Pepper Salt and Pepper
1 beaten Egg Egg Egg
Juice of 1 Lemon or Orange Lemon Lemon

MethodMelt butter, add onion and cook until soft but not browned. Add walnuts and fry until browned.
Mix these in with the rest of the ingredients.
Stuff duck and truss well.
Roast duck as usual, but first rub skin with a little butter and 2 teaspoons of honey.
