Ingredients
5 Eggs separated Egg Egg
8 oz mixed Nuts (not almonds) Nuts Nuts
8 oz fine Sugar Sugar Sugar
8 oz bitter Chocolate grated Chocolate Chocolate
2 oz finely chopped, candied, orange Peel Peel Peel
1 teaspoon Salt Salt Salt
1 pint Marsala Marsala Marsala
2 slices Bread Bread Bread
2 oz Butter Butter Butter

MethodBeat yolks, pound nuts. Combine with sugar, chocolate, peel, salt and marsala. Crumb bread and fry the crumbs lightly in butter. Grease shallow ovenproof dish, and spread crumbs over. Whisk whites stiffly and fold into nut mixture. Pour into dish and bake 30 minutes in a moderate oven. Serve hot or cold.
