Ingredients
5 Egg Yolks Egg Egg
4 Egg Whites Egg Egg
5 heaped tablespoons Sugar Sugar Sugar
Few tablespoons Cocoa Cocoa Cocoa
500 g Mascarpone Marscarpone Cheese Marscarpone Cheese
1/2 cup Cognac Brandy Brandy
500 g Savoiardi Biscuit Fingers Biscuit Biscuit
1 cup Coffee and Coffee Coffee
1/2 cup Marsala mixed Marsala Marsala

MethodBeat the yolks with the sugar, beat separately the whites until light and fluffy and combine both with the mascarpone and cognac in a large bowl. Put the coffee-marsala in a separate bowl and dip the biscuit fingers, then place them on a tray. Cover with a layer of the cheese mixture, another layer of biscuits, cover again and repeat a third time. The last layer must be of cheese.
Sprinkle cocoa over it and leave in the refrigerator for at least six hours, then slice and serve. It should satisfy about six people.
A simpler, though equally delicious recipe is mascarpone with liqueur.
