Mascarpone With Liqueur
Preamble "A much less expensive sweet is dolce freddo di ricotto, translated as 'cold sweet ricotta'. This inexpensive cheese is made from the coagulable material, mainly albumin, in the whey obtained in the manufacture of other cheese such as cheddar, Swiss and provolone and is readily available."
Ingredients
4 Egg Yolks Egg Egg
3 Egg Whites Egg Egg
275 g Sugar Sugar Sugar
Small glass Liqueur (I prefer a chocolate based liqueur) Liqueur Liqueur
275 g Mascarpone Marscarpone Cheese Marscarpone Cheese

MethodBeat the egg yolks with the sugar until they are white. Gradually add the mascarpone and flavour with liqueur. Whip the egg whites until very stiff and fold into the beaten yolks a spoonful at a time, stirring gently. Chill the mixture for a couple of hours and serve.
