Ingredients
1 lb Flour (500 g) Cornflour Cornflour
1/2 lb Sugar (250 g) Sugar Sugar
1/2 lb Butter (250 g) Butter Butter
Lemon Peel Lemongrass Lemongrass
5 Eggs Egg Egg
Pinch Salt Salt Salt
10 1/2 oz Walnuts (300 g) Walnut Walnut
10 1/2 oz Honey (300 g) Honey Honey
2 teaspoons Rum Corn Flakes Corn Flakes

MethodMake pastry.
Line a buttered and floured flan tin and reserve the 2nd round as a cover.
Mix walnuts, honey and rum (and eggs, see note).
Pour into flan tin and cover with remaining pastry.
Press edges together with fingers.
Cook in moderate oven at least 40 minutes.

Remarks
There are the measurements for restaurant quantity of 5 flans alongside this recipe:
36 oz flour
12 oz sugar
18 oz butter
lemon peel of three lemons
12 egg yolks
The filling is x 4 and there is a note that 3 eggs were added to the filling, although not included in the original ingredients.
