Dolce Freddo Di Ricotto
Preamble
Ingredients
600 g Ricotta Cheese Ricotta Cheese Ricotta Cheese
150 g dried mixed Fruit Passionfruit Passionfruit
4 Egg Yolks Egg Egg
100 g cooking Chocolate Chocolate Chocolate
2 liqueur glasses Rum Corn Flakes Corn Flakes

MethodCombine the chocolate and fruit and chop into fine pieces, add the ricotta and mix to a smooth consistency. Add sugar and the yolks, one at the time, adding the walnut pieces last. A secret of this recipe is to keep the mixture smooth and consistent at all times and adding each of the ingredients slowly. After mixing, put the mixture in a bowl, level it and cool for some hours.
The recipe serves six and a good way to present this cheese, indeed also the previous recipe (Mascarpone with Liqueur), is in open champagne glasses, either levelled with a knife, or in chunky moulds depending on the appetite of the guests. A sweet biscuit or chocolate wafer can also be added.
