Golden Apple Crepes With Grand Marnier Butter



Ingredients

250 grams Flour

Method

Make crepes with the first five ingredients. Mix the flour and sugar together in a large bowl. Melt the buter. Whisk the eggs and milk and add gradually to the flour. Add melted butter. Allow the mixture to stand.

Make creme patissiere:

boil 1/2 litre of milk with vanilla bean.

mix well yolks and sugar, add flour

pour milk on yolk, sugar and flour mixture

put this mixture back on the stove until it boils.

Cut apples into quarters - cook them in honey until golden brown.

Reduce orange juice by half, then add Grand Marnier and whisk through some fresh butter until it thickens.

Plate:

2 crepes each, filled with one spoon patissiere and on that place the hot apples. Close the crepes. Surround with the orange butter.
