Chocolate, Whiskey And Raisin Cake



Ingredients

1/2 cup Raisins

225 grams Almond Meal

1/4 teaspoon Baking Powder

400 grams best Dark Cooking Chocolate

300 grams Castor Sugar

225 grams Unsalted Butter

50 grams Plain Flour

Method

Soak raisins in whiskey for 4-5 days.

Cream sugar and yolks.

Melt chocolate in double boiler with water and butter and add to the cream mixture.

Fold in the almond meal, baking powder, self raising flour and plain flour.

Fold in the soaked raisins and whiskey.

Beat the egg whites and fold in.

Pour mixture shallowly into an oblong baking tin and cook in a moderate oven for 45 + minutes.

Serve sliced on a berry coulis with fresh berries and pure cream.

Berry Coulis

Wash, drain and puree two punnets of raspberries (or strawberries).

Cook for a very short time with sugar syrup to taste.

Strain through a muslin and leave to cool.
