Chocolate Mousse



Ingredients

600 grams Chocolate (couverture preferably)

18 Egg Yolks

Method

Put the chocolate to melt in a big bowl above a pot of hot water, when the chocolate is melted, add to it the egg yolks. Separately beat the egg white and when they are very fluffy, add them gently to the chocolate and egg yolk mixture. Put it in the fridge in order to set, it needs 1/2 hour minimum to set.
