Chocolate Marquise
Preamble
See Chocolate Mousse
Ingredients8 oz sweet Chocolate 4 Eggs 3 oz Castor Sugar Few drops Vanilla or Rum 4 oz Butter |
MethodMelt the chocolate in the top of a double saucepan over hot water. Beat the egg yolks lightly, add the castor sugar and beat until the mixture is thick and frothy. Add the cooled chocolate and the vanilla or rum and continue beating. Soften the butter and add slowly to the mixture. Beat the egg whites until stiff and fold into the chocolate mixture. Pour into one large oiled mould or individual glasses. Chill in the refrigerator overnight. Serve decorated with cream. |
