Almond Ice Cream
Ingredients8 oz blanched Almonds 4 pints Milk 2 capfuls Almond Essence 20 Egg Yolks 1 1/3 lb Castor Sugar 20 Egg Whites 10 oz toasted Almonds |
MethodPound blanched almonds and add to 4 pints of milk and 2 cap-fuls of almond essence. Bring to the boil and take off heat. Beat egg yolks with castor sugar, put in double boiler and add milk gradually. Don't let it boil. When cooked, strain into churn. Churn when cool. When nearly frozen, add beaten egg whites, and toasted and roughly chopped almonds. Fold through and let freeze again |
