Lemon Cream Pie
Ingredients
6 inch Crumb Crust Crust Crust
3 Egg Yolks Egg Egg
6 oz Butter Butter Butter
1 cup Sugar Sugar Sugar
2 Lemons juice and rind Lemon Lemon
Pinch of Salt Salt Salt
1 teaspoon Gelatine Gelatine Gelatine
1/2 pint Cream Cream Cream
1 tablespoon cold Water Water Water
Toasted slivered Almonds Almond Meal Almond Meal

MethodSoften gelatine in cold water. Combine beaten egg yolks, sugar, butter, lemon rind and juice, salt and softened gelatine in top of a double sauce bin. Cook over simmering water, stirring until mixture thickens slightly. Allow to cool, pour into prepared case - chill.
Just before serving, pipe cream which has been whipped and sweetened, to cover top of pie, sprinkle with toasted slivered almonds.
