Coconut Pudding
Preamble
"Just delicious" (Warragul) sends this recipe.
Ingredients1 pint Milk 2 tablespoons Flour 2 tablespoons Coconut 2 tablespoons Sugar 2 tablespoons Castor Sugar 1 tablespoon Butter 2 Eggs Rind of 1 Lemon |
MethodPut milk and butter on to boil. Mix the flour smoothly with a little cold milk. When the milk boils stir in the flour and cook for 2 minutes. Add coconut, lemon rind and yolks of eggs well beaten with sugar. Pour into a buttered pie-dish and stand in a baking dish of water in a moderate oven until set. Beat the whites of eggs to a stiff froth, and castor sugar. Place on top of pudding and leave in slow oven until coloured. |
